NF-κB
Transcription factor NF-kappaB/REL is activated through complex phosphorylation processes to signal a response to injury and infection. It is very important in protecting the body from infectious agents, but can get out of control. Overactivation leads to heart disease, joint destruction, cancer, tumor proliferation and a variety of other deadly symptoms of inflammation. Consumption of curcumin from turmeric , as well as, Korean angelica extract and perhaps Eicosapentaenoic acid (EPA) can be used to turn off this pathway when it is a problem. Drugs, such as disulfiram, olmesartan and dithiocarbamates also do this. Likewise, consumption of luteolin from olives helps to suppress NF-alpha, as well as, interleuklin-1. Genistein in soy isoflavones helps prevent NF-kappaB activation by NF-alpha. In summary, a diet of turmeric, soy, olives, fish, and Korean angelica are some of the foods that may help chronic inflammation when used in conjunction with a healthy, balanced diet.
